Clonakilty Bacon, brocolli and feta salad with sweet balsamic dressing

A flavoursome pop of colour! Salads are ideal any time of the year because they’re easy to prepare ahead of time, and can be doubled up as both a side dish or a main dish. The crispy crunch of the brocolli and Clonakilty bacon compliments the smoothness of the feta, all topped with a sweet balsamic dressing, it is just yum!

Ingredients

150g Clonakilty Beechwood lightly smoked rashers

200g Broccoli

100g Feta

1 small Red onion

60g Salad leaves

Dressing 

15ml Balsamic vinegar

30ml Olive oil

10ml Maple syrup

10ml lemon juice

Salt and pepper to taste

Method

  1. Chop the broccoli and the red onion finely. Grill the rashers for 3 to 4 minutes until the edges are golden and chop into bite-size pieces.
  2. Add the broccoli, red onion, bacon and salad leaves( you can use what you have in the fridge) into a large serving bowl. Crumb the feta over the serving bowl and give it a gentle mix.
  3. Add the maple syrup, balsamic vinegar, lemon juice and olive oil to a small bowl, whisk till combined and add salt and pepper to taste.
  4. Pour the dressing over the salad and mix again gently. Serve immediately.
